Thanksgiving is around the corner and I am so here for it! Eating vegan and gluten-free means holidays look quite a bit different around my house, but that doesn’t mean we don’t enjoy traditional Thanksgiving appetizers and sides. With a few swaps, it’s totally possible to capture the flavors of the holiday without dairy or grains. For example, this Vegan Mashed Potato Chip Dip! It tastes just like your family’s famous mashed potatoes in a snackable format.
You might be asking yourself, “Can’t I just eat this dip with a spoon and call it vegan mashed potatoes?” You totally can. However, I realized that the savory flavor and creamy texture of vegan mashed potatoes is a perfect contrast for crunchy veggies and potato chips. Hence, this dip was born. Eat it with a spoon or dip to your heart’s content; choose your own adventure!
If you’ve ever made mashed potatoes, this dip recipe will look very familiar. You start by peeling, dicing, and boiling potatoes until they’re very tender.
Add in a package of our Garlic & Herb Cheeze Spread for creamy, dreamy texture and delicious garlicky flavor. Vegan sour cream and non-dairy milk give this Vegan Mashed Potato Chip Dip the perfect consistency. I added some fresh chives, garlic powder, salt, and pepper for even more flavor.
The trick to creamy and non-gluey mashed potatoes is stirring and mashing as little as possible. Overworking your potatoes will make them sticky and gross, so definitely avoid using a food processor or blender for this recipe. Just mash by hand until you get the perfect texture. Serves 6
Ingredients
- 2 pounds gold potatoes, peeled and cut into 1-inch cubes
- 1 package Plant Perks Garlic & Herb Cheeze Spread
- ½ cup vegan sour cream
- 2 tablespoons non-dairy milk
- 1 tablespoon fresh chives, finely chopped (plus more for topping)
- ¼ teaspoon garlic powder
- 1 teaspoon salt
- Several twists of black pepper
- Swirl of olive oil, for serving
- Potato chips, for dipping
- Veggies, for dipping
Instructions
- Place the diced potato in a large pot. Fill the pot with water, covering the potatoes by about an inch. Add a big pinch of salt to the pot and bring the water to a boil.
- Cover and boil the potatoes for 20 minutes, until they’re very soft when pierced with a fork. Drain the potatoes and return them to the pot.
- Scoop the Garlic & Herb Cheeze Spread into the pot and add the vegan sour cream, non-dairy milk, chives, garlic powder, salt, and black pepper. Stir and smash the potatoes with the back of a spoon until thick and creamy. Don’t over-mix! Add more salt to taste.
- Scoop the Vegan Mashed Potato Chip Dip into a bowl. Add a swirl of olive oil to the top of the dip and sprinkle with extra chives. Serve warm with chips and veggies for dipping.
